Durham restaurant adding 20% ‘fair wage service fee’ to every billDurham County News by: Gilat Melamed Posted: Jun 27, 2021 / 10:56 PM EDT / Updated: Jun 28, 2021 / 12:15 PM EDT DURHAM, N.C. (WNCN) — A restaurant in Durham said it’s now paying employees a fair wage, but that means some customers could be left with a bigger bill. Pizzeria Toro added a 20 percent gratuity to every bill for dine-in customers, along with a message saying seen and unseen hourly wage workers are the backbone of the restaurant. Gray Brooks is a chef and one of the owners of Pizzeria Toro. He said some prep cooks and dishwashers had to work two jobs.
MORE NEWS: Struggling to find restaurant workers? Why not pay them more? He sees the fee as a way to close the wage gap between staff who traditionally did not make tips and those who did. “The restaurant business is such a slim margin business, we were paying them as much as we could and it wasn’t enough,” Brooks said. “This was a way to sort of take that extra income and spread it out so that everybody was making enough to make a living.” Brooks said a living wage to him means enough money to pay bills, with a little leftover every week. He said he considered raising prices by 20 percent and eliminating tips, but said he felt this was more transparent. He said the restaurant is not expecting additional tips. Bartender Arturo Sanchez already made tips. He said closing the gap means he could end up with a little less some days, but it’s a trade-off because he won’t be short-changed during an off night. “A little bit of a decrease in terms of what we’re bringing home every day, but that is gonna be sort of mitigated by the fact that there is less of a stress, and the knowledge that we’re sharing those tips with employees all throughout the restaurant,” Sanchez said. Sanchez said he hopes the practice spreads to more restaurants. Brooks said customers have been mostly supportive, but that there’s been some online pushback from people who say they wouldn’t tip in the case of bad service. According to the MIT Living Wage Calculator, the living wage for a single adult in Durham County is $16 an hour, more than double the current minimum wage. Raleigh City Council approves ‘living wage policy’ for city workers The Durham Living Wage Project recognizes employers in the area it says pay a living wage. The list includes about 20 restaurants and breweries. Pizzeria Toro said it is not certified as a living wage business by the group since its living wage is not fully paid by the employer because the 20 percent gratuity comes from customers. Customer Lily Johnson said the Fair Wage Service Fee makes her more likely to go to Pizzeria Toro. “The most important thing is just to keep your employees happy and I think that’s really awesome that they’re doing that,” Johnson said.

If Lily ordered a $16 pizza, tossed a 20 on the table, and said, "Keep the change" and now orders a $19.20 pizza and saves 80 cents, I don't see the problem.

I'm sure you don't.
Very much like all those that claimed "I'd go out more if they just banned smoking in bars."...... the skeptic in me sees the people doing the work in that place are going to see a drop in income, especially on the $Cash side.

But at least they'll be paying their fair share of taxes and not dodging their responsibility.

Somehow....... the cynic in me suspects the Govt will still be spending far more than they raise in revenues.

Then you better tell your government to stop being lapdogs for the corporations and billionaires that don't pay their fair share. Bezos and Musk should be paying $60 BILLION EACH in taxes this year, but I doubt the government will get anywhere close to that much from both of them combined.
Taxes are the price you pay for having the freedom to be a capitalist.

I have the freedom to vote......... I'm vastly outnumbered by all of the dependent crowd.
I feel like Willy Wonka trying to get the kids to behave in the chocolate factory.

Feel free to campaign for the candidate of your choice and get the word out. You have that freedom as well.
It's funny how you talk about wanting to exercise your freedoms all the time but you don't seem to want to talk directly to the people whose minds you want to change. It's almost as if you don't want things to change because then you'd have nothing to bitch about....

I'm fully aware of the futility of dealing with and reasoning with the average person today.
I'll bitch........but bother with them too much? No, thanks. You go ahead and save them all from themselves. Good luck wit dat.

Yup. Some people have dreams and aspirations. It's a good thing they have you around to kick 'em in the nuts.
The only people I kick in the nuts are those with aspirations and dreams of living off of others for the entirety of their lives.
They keep insisting the American Dream is dead........and yet my example shows how it can be done with even a modest bit of effort and planning.
But the excuse makers are always there to defend them..........usually in exchange for votes.

Work: A. Most people can and do
B. A very few can't and therefore don't
C. Many people can and want to but can't find enough or have run out of time in the day/week
D. A few can but don't want to
Let's eliminate Group B as I think we can agree that people with severe physical and mental disabilities aren't part of the larger picture. Fair?
Your concern is about Group D, but you conflate them with Group C... probably so that you can have an "example" to point to.
UHC would help all Groups. With Group C, since a large, financial burden has been lifted, they might find that they now don't have as many time constraints and opt to get to work. You might say that they won't. I say it's worth a shot especially since I get the benefit too and I really want more people in the workplace paying taxes.
Group D will still exist. My solution to that was a concept that I called "The Obligation of the Citizen" which most people on v2 (admittedly, mostly the "libs") hated.
Either way, I think that, in the end, the size of Group D will diminish with time.
Improving our educational system would benefit all groups and help to diminish the size of Group D further while enhancing opportunities for Groups A and C and potentially leading to breakthroughs that diminish the numbers of Group B as well.
Our education system is one of those poorly-run programs that you rail against. I think that the right people working from the right plan could put the US right back at the top of the lists of "Best Education Systems in the World."
It WILL cost money. It will increase your taxes. But it will also lead to better lives for your descendants... or those of people who have descendants.
I think it can be done, but I'm guessing that you'll say that the right people and right plan will never be found or that some other government boondoggle will fuck it all up.
I like being a person with dreams and aspirations for my country and my fellow Americans.
